
This is a lighter alternative to the classic oat porridge. I really love this porridge, specially during summer and warmer wether. I tend to feel like the classic oat porridge get a bit too heavy, but this cauliflower porridge is everything I like and need. Its paleo friendly, grain free, vegan and really easy to make.

This porridge still has a lot of flavor due to the spices, is still as filling as a regular porridge, but has a lighter feeling to it. I chose to top my porridge with home made Rhubarb Sauce and some pistachio nuts.

Ingredients for the Cauliflower Porridge:
- Cauliflower
- Plant based milk
- Cinnamon
- Cardamom
- Vanilla stevia drops
- Rbubarb Spread/Compote
- Pistachio nuts

Cauliflower Porridge with Rhubarb & Pistachios (Paleo Friedly)
Easy and light porridge made out of cauliflower
Servings 2
Ingredients
- 1 small Cauliflower head riced
- 2 dl Plant based milk (I used almond)
- 3-4 drops Vanilla stevia drops or 1 tsp vanilla extract
- 2 tsp Cinnamon
- 1 tsp Cardamom
- 4 tbsp Rhubarb spread/sauce
- 2 tbsp Pistachio nuts roughly chopped
Instructions
- Process the cauliflower in a food processor until you have oat-sized pieces
- Add milk, cauliflower, cinnamon cardamom & vanilla in a pot and let it shimmer for 10-15 minutes (depending on how soft you like your porridge, I like it when it still has some mastication)
- Pout into two bowls, top with rhubarb spread and chopped pistachio nuts
- Eat when warm
