Goat Cheese Stuffed Apricots

I love snacks and finger foods! Maybe because I really like eating a lot of small dishes instead of one main course. You can have a little bit of everything, instead of having to choose one thing. It’s also such a good way of using veggies and fruits that are in season, letting yourself experiment with different tastes and combinations. These cute and delicious Goat Cheese stuffed Apricots that I made today is a must try.

The combination of sweet apricots, tangy goat cheese, salty, crunchy pistachios and sweet yet tart balsamic vinegar just builds up the most amazing taste explosion in your mouth!

Ingredients for the Goat Cheese stuffed Apricots:

  • Apricots
  • Goat cheese
  • Creme Fraiche/Yoghurt
  • Pistachio nuts
  • Thick balsamic vinegar

Goat Cheese stuffed Apricots

  • 3 Apricots divided in two and pitted
  • 20 g Goat cheese
  • 1-2 rbsp Creme Fraiche/Yoghurt
  • 6-7 Pistachio nuts peeled and roughly chopped
  • Thick balsamic vinegar


  • Put the cut and pitted apricots with cut side up on a plate.
  • Mix goat cheese with Creme Fraiche/Yoghurt in a bowl until combined.
  • Fill the apricots with the goat cheese mixture.
  • Top with chopped pistachio nuts and balsamic vinegar.
