Tofu Bowl with a Spicy Tamarind Dressing

This is an easy and delicous tofu bowl with a spicy tamarind dressing

Ingredients

For the salad bowl

  • 2 hands full of Green leafs
  • 1 Zucchini spiralized
  • 1 large Carrot washed and shaved
  • 10 Sugar snaps or snow peas thinly sliced lenght wise
  • 1 Scallion (both with and green parts) sliced

For the tofu

  • 1 package Tofu diced
  • 3 tbsp Tamari (or soya sauce)
  • 1 tbsp Sesame oil
  • 1/2 Lime juiced
  • 1 tbsp Rice or white wine vinegar

For the spicy tamarind sauce

  • 3 tbsp Tamarind paste
  • 1 tbsp Sesame oil
  • 1 tbsp Rice or white wine vinegar
  • 1/2 Lime juiced
  • 1/2-1 Red chili finely chopped
  • 1/2 Garlic clove (optional) minced
  • 1/2-1 cm Fresh ginger grated
  • 1/2-1 tbsp Agave or honey (optional, I did not use it)

Instructions

  • Preheat the oven to 175 degrees Celcius.
  • Combine all ingredients for the tofu in a bowl, except for the tofu.
  • Dice the tofu and add to the bowl. Combine and make sure that the sauce covers all parts.
  • Place the tofu on a parchment covered baking sheet and bake in the oven for 10 minutes.
  • Combine all ingredients for the spicy tamarind marinade in a bowl and set aside.
  • Add the vegetables in two bowls.
  • When the tofu is ready place it on top of the vegetables.
  • Serve with the spicy tamarind dressing.
