Preheat the oven to 175 degrees Celcius.
Combine all ingredients for the tofu in a bowl, except for the tofu.
Dice the tofu and add to the bowl. Combine and make sure that the sauce covers all parts.
Place the tofu on a parchment covered baking sheet and bake in the oven for 10 minutes.
Combine all ingredients for the spicy tamarind marinade in a bowl and set aside.
Add the vegetables in two bowls.
When the tofu is ready place it on top of the vegetables.
Serve with the spicy tamarind dressing.
