6Gluten free taco bread
200gChicken fillet diced
A drizzle ofOlive oil
1tspCajun pepper
1tspPaprika powder
1/2tspLemon juice
1/2canBlack beansrinsed and washed
1/2packageFeta cheesecrumbled
1/2-1Mangodiced
2-3tbspPickled red onion
Salsa, to top
Cilantro, to top
Instructions
Preheat the oven to 75 degrees.
Preheat a nonstick pan over medium heat with some olive oil.
Add the chicken, cajun pepper, cajun pepper, paprika powder and lemon juice to the pan and fry for a few minutes. Just until the chicken is browned and perfectly done inside.
Peaheat another non stick pan at the same time and fry tortilla bread just until browned, then put in the oven to keep warm.
When the chicken is ready and the bread is fried and warm serve with diced mango, black beans, crumbled feta cheese and pickled onion.
