Strawberry Cheesecake Overnight Oats (Gluten & Sugar Free)

This is a creamy, fresh and super delicious cheesecake overnight oats that is great to make both for breakfast or as an afternoon snack.

Ingredients

For the overnight oats

  • 2 tbsp Chia seeds
  • 2 dl Oats
  • 2 dl Milk (I used oat milk)
  • 1 dl Greek yogurt
  • 1 dl Cream cheese
  • 6-7 drops Stevia vanilla drops or vanilla extract
  • 1-2 tsp Sweetener (optional)

For the crumble

  • 1/2 dl Oats
  • 1 dl Oat flour
  • 2 tbsp Coconut oil
  • 2 tsp Sweetener

For the topping

  • 4-5 Strawberries sliced

Instructions

  • Combine milk, greek yogurt, cream cheese, stevia vanilla drops and sweetener (if using) in a bowl.
  • Add the chia seeds and oats, stir to combine. Place in the fridge for at least two hours.
  • Preheat the oven to 200 degrees Celcius.
  • Combine the ingredients for the crumble in a bowl. Mix well. Place on a baking sheet or in a baking pan and spread out to an even layer. Bake for 15-20 minutes, until golden brown.
  • When ready to serve divide about 2/3 of the overnight oats between two bowls. Top with the half of the crumble, sliced strawberries. Top with the rest of the overnight oats, crumble and a few more strawberry slices on top.
