Polish Knedle with Plums (Vegan, Gluten Free, Sugar Free)

A healthier and vegan version of the classic polish knedle with plums

Ingredients

  • 10 (350 g) medium sized Potatoes cooked, cooled and peeled
  • 1 1/2 dl Oat flour
  • 1 dl Apple sauce
  • 12-14 or 7-8 Plums (depending on how big they are)

Instructions

  • Cook the potatoes and let them cool completely.
  • Cut the plums in half if using big ones.
  • Process the potatoes through a potato ricer.
  • Combinw potato rice, oat flour and apple sauce and kneed until you have a firm dough. (It will still be a bit sticky).
  • FLour a flat surface and divide the dough into 12-14 equally sized round pieces.
  • Roll out to small circles.
  • Put a plum/plum half in the middle of each circle and seal. It may be a good idea to have wet hands, it will make it easier to seal the knedle. Also, if the dough breaks a little, wet your hands a bit more so that the dough gets a bit sticky, that will help seal the. Don't worry, they won't break when you cook them.
  • Bring water to a boil in a big pot.
  • Lower the heat and let the water shimmer and add 3-4 knedle to the pot.
  • When they come up to the surface of the water cook for about 5 minutes.
  • Then bring out of the water and repeat until you have cooked them all.
  • Serve with vegan yoghurt (you can also add some sweetener to the yoghurt if you prefer it sweeter).
