Cook the potatoes and let them cool completely.
Cut the plums in half if using big ones.
Process the potatoes through a potato ricer.
Combinw potato rice, oat flour and apple sauce and kneed until you have a firm dough. (It will still be a bit sticky).
FLour a flat surface and divide the dough into 12-14 equally sized round pieces.
Roll out to small circles.
Put a plum/plum half in the middle of each circle and seal. It may be a good idea to have wet hands, it will make it easier to seal the knedle. Also, if the dough breaks a little, wet your hands a bit more so that the dough gets a bit sticky, that will help seal the. Don't worry, they won't break when you cook them.
Bring water to a boil in a big pot.
Lower the heat and let the water shimmer and add 3-4 knedle to the pot.
When they come up to the surface of the water cook for about 5 minutes.
Then bring out of the water and repeat until you have cooked them all.
Serve with vegan yoghurt (you can also add some sweetener to the yoghurt if you prefer it sweeter).
