Roasted Tomatoes on a Feta Yogurt Bed (Gluten, Grain, Oil Free & Low Carb)
This is a warm and delicous side dish with good quality tomatoes served on a delicious feta cheese yoghurt bed
- 20 Good quality cherry tomatoes
- 1/2 package Feta cheese
- 3-4 tbsp Plain yoghurt
- Fresh basil roughly chopped
- Sea salt, to taste
- Freshly ground black pepper
Preheat the oven to 200 degrees Celsius.
Add the tomatoes to a baking sheet and bake in the oven for 15-20 minutes, until they're starting to break a little and getting golden brown.
Meahwhile combine feta cheese and yoghurt using a hand mixer.
Mix until smooth and a bit fluffy.
When tomatoes are ready put the feta yoghurt dip on a plate.
Put warm cherry tomatoes on top.
Add freshly ground pepper, sea salt and fresh basil on top.
