Sweet Potato Toast with Prosciutto, Asparagus & Burrata (Gluten & Grain Free)
This is a delicous and easy brunch idea using good qualty ingredients
Servings 2 toasts
- 2 slices Sweet potato
- 2-4 slices Prosciutto
- 8 Asparagus
- 2 Burrata
- Black pepper, to top
- Micro greens, to top
Preheat the oven to 200 degrees Celcius.
Put the two slices of sweet potato on a parchment covered baking sheet and bake for 10-12 minutes (until soft and golden).
Meanwhile preheat a nonstick pan over medium heat and fry the asparagus on meadium heat for 5-8 minutes. Just until golden and browned.They should still be crunchy.
When potaotes are ready put on two plate.
Add prosciutto, asparagus and burrata on top. Top with freshly ground black pepper and micro greens.
