Fudgy Avocado Brownie (Gluten, Grain, Dairy, Sugar & Oil Free, Low Carb)

These fudgy and delcious brownies are made with avocado and nut butter.

Ingredients

  • 1 Avocado pitted and finely mashed
  • 2 Eggs
  • 2-3 tbsp Cacao powder
  • 2 tbsp Nut butter (I used almond)
  • 1 tbsp Apple sauce (optional, makes the brownie more fudgy)
  • 2 tbsp Strong coffee (optional)
  • 1-3 tbsp Stevia sugar (depending on how sweet you prefer them)
  • 1 tsp Baking powder
  • A pinch of Salt
  • 2 tbsp Chocolate/chocolate chips (optional) roughly chopped
  • Sea salt, to top (optional)

Instructions

  • Preheat the oven to 175 degrees Celsius.
  • Mix the mashed avocado and egg in a blender.
  • Add the nut butter and apple sauce (if using), coffe (if using) blend again.
  • Combine all the dry ingredients in a seperate bowl (except for the chocolate chips and sea salt).
  • Add dry ingredients to the blender and mix until smooth.
  • Add roughly chopped chocolate/chocolate chips and fold in.
  • Pour the batter into a parchment covered baking pan.
  • Add more chocolate chips on top.
  • Bake in the oven for 20-25 minutes, depending on how fudgy you prefer them.
  • Take out and sprinkle sea salt on top (optional).
