Pancake Breakfast Cereal

Small, cute pancake breakfast cereal

  • 1 Egg
  • 1,5 dl Oat flour
  • 1 dl Almond milk (or any other milk)
  • 1 tsp Baking powder
  • 1 tsp Cinnamon
  • 3-4 drops Vanilla stevia drops (can be replaced by 1 tsp vanilla extract)
  • 1 tbsp Sugar if you prefer sweeter pancakes (optional, I did not use it)
  • Coconut oil


  • Combine the dry ingredients in a bowl
  • Add the wet ingredients and combine until you have a smooth batter
  • Preheat the oven to 200 degrees
  • Preheat a nonstick pan over medium heat with some coocnut ouk in it
  • Make small pancakes by using one tsp of batter
  • Fry on each side until golden
  • When done put in a oven safe dish and put it in the oven while frying the rest of the batter. This will keep them warm and also make them extra crispy around the edges
  • Serve with milk and your prefered topping
