Preheat the oven to 175 degrees Celcius.
Line a 31*18 (or similar) baking pan with parchment paper.
Start by making the streusel by combining all the ingredients in a bowl. Set aside.
Next add eggs and sugar into a blender or a bowl and whisk until fluffy and fully combined.
Add the yogurt, apple sauce, vanilla extract and coconut oil and mix until incorporated.
Combine oat flour, rice flour, baking powder, baking soda and salt in a separate bowl and mix well.
Add the dry ingredients to the wet and mix until you have a smooth batter.
Gently fold in the diced figs into the batter.
Add the batter to the lined baking pan.
Add the streusel on top and press it down a little bit gently to make sure it sticks to the cake.
Bake in the oven for 40-45 minutes, until an inserted toothpick comes out clean.
Let it cool before removing it from the pan and cutting it.
