Ingredients

  • 500 g Pears diced
  • 1 dl Apple cider vinegar
  • 1 dl Water (plus more if needed)
  • A pinch of Sea salt
  • 1/4-1/2 dl Sugar free brown sugar
  • 1/4-1/2 dl Granulated sugar free sweetener
  • 1 tsp Lemon juice
  • 1/2-1 tsp Cinnamon
  • 1/2-1 tsp Cardamom
  • 1/2-1 tbsp Fresh ginger grated

Instructions

  • Preheat the oven to 165 degrees Celsius.
  • Dice (peel and core if preferred) the pears and place in a baking dish.
  • Add remaining ingredients and stir together.
  • Place in the middle of the oven and bake for approximately 3 hours. Stir every now and then (about every 40 minutes or so), add more water if needed. The butter is ready when it has thickened, deepened in color and is very soft and tender.
  • Remove from the oven, taste to check the flavor. Add more seasoning if needed. Now you can either stir together the pear butter using a wooden spoon, breaking up any larger pear pieces and leave it slightly chunky. Or you can mix it completely smooth using a hand mixer. Place in a clean (important!!) jar, store in the fridge for up to three weeks.
