Blini with Créme Fraîche, Fish Roe & Salmon

These blinis are perfect to make when you want a festive and delicous appetizer

Ingredients

For the blinis

  • 1 dl Buckwheat flour
  • 1/4 dl Rice flour (or more buckwheat)
  • 1 Egg
  • 1 dl Milk (I used almond)
  • 1/2 tsp Salt
  • 3/4 tsp Baking powder
  • 1-2 tsp Olive oil, to fry

Topping 1

  • 1 1/2 tbsp Creme Fraîche
  • 6 tsp Red fish roe
  • 6 Shrimps peeled
  • Dill, to garnish

Topping 2

  • 1-1 1/2 tbsp Creme Fraîche
  • 6 tsp Black fish roe
  • 6 Shrimps peeled
  • Dill, to garnish

Topping 3

  • 1-1 1/2 tbsp Creme Fraîche
  • 6 tsp Black fish roe
  • 2 slices Smoked salmon divided into smaller pieces
  • Dill, to garnish

Instructions

  • Add all the ingredients for the blini except for the olive oil in a blender and mix until smooth.
  • Let the batter rest while you preheat a nonstick pan over medium heat with a little olive oil.
  • Make small pancakes by adding about 1 tsp of batter to the pan. Don't make too many at a time, it will make it hard to flip them. Fry for 1-2 minutes until golden brown, then flip and fry for another 1-2 minutes on the other side.
  • Repeat with the rest of the batter.
  • Meanwhile peel the shrimps and cut the salmon into smaller pieces.
  • Make six blinis with each of the toppings mentioned above.
