
If you want to make an easy, festive and delicious appetizer you should try making these Blini with Créme Fraîche, Fish Roe & Salmon. They are gluten free, easy to make, delicious and super cute. Blinis can also be served as a starter, just make the pancakes bigger and serve a few bigger ones.

Have you ever tried making Russian blinis? It’s small pancakes made using buckwheat. They are usually served with sour cream, caviar and onion. But they can also be served sweet with jam, apples or Russian “tvorog”. I made my own interpretation of the savory version and served them with my favorite seafood toppings. I made three different, yet quite similar toppings. 1. Créme Fraîche, red fish roe, shrimp and dill. 2. Créme Fraîche, black fish roe, shrimp and dill. 3. Créme Fraîche, black fish roe, smoked salmon and dill. Since they’re served as appetizers I prefer to fry small pancakes, only using about one teaspoon batter for each. I like when they are light, bite sized and not too heavy. But you can of course make bigger ones if you prefer them bigger or want to serve them as a starter.

- Buckwheat flour
- Rice flour
- Egg
- Milk
- Salt
- Baking powder
- Olive oil
- Créme Fraîche
- Red fish roe/Red Caviar
- Black Fish Roe/Black Caviar
- Shrimps
- Smoked salmon
- Dill

Blini with Créme Fraîche, Fish Roe & Salmon
Ingredients
For the blinis
- 1 dl Buckwheat flour
- 1/4 dl Rice flour (or more buckwheat)
- 1 Egg
- 1 dl Milk (I used almond)
- 1/2 tsp Salt
- 3/4 tsp Baking powder
- 1-2 tsp Olive oil, to fry
Topping 1
- 1 1/2 tbsp Creme Fraîche
- 6 tsp Red fish roe
- 6 Shrimps peeled
- Dill, to garnish
Topping 2
- 1-1 1/2 tbsp Creme Fraîche
- 6 tsp Black fish roe
- 6 Shrimps peeled
- Dill, to garnish
Topping 3
- 1-1 1/2 tbsp Creme Fraîche
- 6 tsp Black fish roe
- 2 slices Smoked salmon divided into smaller pieces
- Dill, to garnish
Instructions
- Add all the ingredients for the blini except for the olive oil in a blender and mix until smooth.
- Let the batter rest while you preheat a nonstick pan over medium heat with a little olive oil.
- Make small pancakes by adding about 1 tsp of batter to the pan. Don't make too many at a time, it will make it hard to flip them. Fry for 1-2 minutes until golden brown, then flip and fry for another 1-2 minutes on the other side.
- Repeat with the rest of the batter.
- Meanwhile peel the shrimps and cut the salmon into smaller pieces.
- Make six blinis with each of the toppings mentioned above.
