Cauliflower & Leek Fritters (Gluten & Grain Free, Low Carb)

This is a recipe for easy and delicous cauliflower and leek fritters.

Ingredients

  • 3-4 dl Cauliflower florets grated or run in a blender
  • 2 tbsp Leek thinly sliced
  • 1 Egg/Flax egg
  • 1 tbsp Flour (of your choice)
  • Salt, to taste
  • Black pepper, to taste
  • Coconut or olive oil, to fry

Instructions

  • Preheat a nonstick pan over medium heat with some olive oil or coconut oil.
  • Meanwhile grate or run the cauliflower florets in a high speed blender.
  • Add the leek, egg/flax egg, flour, salt and pepper and combine until you have a smooth mixture.
  • Form 5-6 equally sized fritters and fry in the pan for 3-5 minutes on each side.
