Cauliflower & Leek Fritters (Gluten & Grain Free, Low Carb)
This is a recipe for easy and delicous cauliflower and leek fritters.

- 3-4 dl Cauliflower florets grated or run in a blender
- 2 tbsp Leek thinly sliced
- 1 Egg/Flax egg
- 1 tbsp Flour (of your choice)
- Salt, to taste
- Black pepper, to taste
- Coconut or olive oil, to fry
Preheat a nonstick pan over medium heat with some olive oil or coconut oil.
Meanwhile grate or run the cauliflower florets in a high speed blender.
Add the leek, egg/flax egg, flour, salt and pepper and combine until you have a smooth mixture.
Form 5-6 equally sized fritters and fry in the pan for 3-5 minutes on each side.
