Plum Compote with Cinnamon & Ginger (Vegan, Gluten, Grain & Sugar Free)

This is a healthy, easy and delicous plum compote that can be used for topping breakfast bowls, in dessert or just eating it as it is.

Ingredients

  • 10-15 Plums (depending on the size) cut in half and pitted
  • 1 - 1 1/2 (1) dl (cups) Water (plus more as needed)
  • 2-3 tbsp Monk fruit sweetener (or more if you prefer it sweeter)
  • 1-2 tsp Cinnamon (optional)
  • 1 cm Freshly grated ginger (optional)

Instructions

  • Bring water to a boil in a pot.
  • Add the pitted plums, sweetener, cinnamon and ginger to the pot and lower the heat. Pour the water into the pot and make sure it covered the plums.
  • Bring to a low boil, then lower the heat and let the plums simmer for 10-20 minutes. The plums should be soft and tender, but still firm and hold together. The water should have reduced and thickened slightly.
