Scrambled Sweet Potato Pancakes (Gluten, Dairy & Sugar Free)
This is an easy, delicious and quick recipe for scrambled sweet potato pancakes.

- 2 dl Sweet potato mash
- 2 Eggs
- 1 1/2 dl Plant based milk
- 6-8 drops Stevia vanilla drops
- 1-1 1/2 tsp Cinnamon
- 1-2 tbsp Xylitol (optional)
- Coconut oil, to fry
For the topping
- 1 dl Greek yogurt or whipped cream
- 3-4 Strawberries cut in quarters
- 8-10 Blueberries
Preheat a nonstick pan (or two smaller once) with some coconut oil over medium heat.
Combine all the ingredients for the pancakes and whisk until you have a smooth and quite thick batter.
When the pan it hot pour the batter to the nonstick pan and fry for 1-2 minutes. (It will be quite thick).
When the pancake has set a bit scramble it using a spatula or wooden knife until you have small pancake pieces.
Fry for another 1-2 minutes until the pancakes are done.
Serve with yogurt
