There are two options for the sweet potatoes. I went with the first one.
Option 1: Preheat the oven to 200 degrees.
Slice the sweet potatoes and place on a parchment covered baking sheet.
Bake in the oven for approximately 10-12 minutes (until soft).
Option 2: Roast the sweet potatoes using a toaster. You might need to run it twice.
Combine whisked eggs, milk, cinnamon (if using) and stevia vanilla drops in a bowl. Whisk until combined.
When the potatoes are ready (either in the oven for toaster) peaheat a nonstick pan over medium heat with some coconut oil (if using, I did not use it)
If you didnt use the oven turn it on and heat up to 100 degrees Celsius.
Dip a slice of sweet potato in the egg whish and add to the pan. Fry for about 1 minute on each side, just until it starts to get golden brown.
Place the sweet potatoes in the hot (but turned off owen) to keep them warm.
Repeat with the remaining.
Serve the sweet potato french toast with yogurt, raspberries, blueberries and nutbutter.
