Remove the rind from the camembert using a sharp knife.
Add to a mixer or high speed blender along with greek yogurt (if using). Mix until smooth, scrape the sides as needed.
Place the whipped cheese in a bowl.
Preheat a nonstick pan over medium heat with some olive oil.
Core and slice the nectarine.
When the pan add the nectarines add fry for 1-2 minutes. Stir when one side is golden brown and add the honey/agave/fiber syrup, chili flakes and sea salt. Fry for another 1-2 minutes. The nectarines should be warm and golden brown, but not soft and mushy.
Place the warm fried nectarines over the whipped cheese. Serve immediately while the peaches are still warm, together with some freshly baked bread (optional).
