A few tips:

  • Use different kind of potatoes depending on what you have at home or like.
  • Swap regular potatoes for sweet potatoes.
  • Vary this tray bake by using different beans or by mixing a few different ones.
  • Use veggies that you have at home or that are in season. Eggplants, pumpkin, beets, different types of onions, broccoli, cauliflower, tomatoes, carrots just to mention a few.

Ingredients

  • 10 Potatoes washed and cut in halves of quarters
  • 1 can cooked white beans rinsed and cleaned
  • 1 Red bell pepper cut into smaller chunks
  • 1 Yellow bell pepper cut into smaller chunks
  • 5-6 Garlic cloves (or a whole garlic head if preferred)
  • 1-1 Red onion cut into wedges
  • 5-10 Button mushrooms cut into halves or quarters
  • 1/2 Zucchini cut into half moons
  • 2 stalks Fresh thyme (dry thyme works as well)
  • Sea salt, to taste
  • 2-3 tbsp Pesto
  • 3-4 tbsp Mixed olives
  • 1 block Feta cheese crumbled

Instructions

  • Preheat the oven to 200 degrees Celsius or the air fryer to 180 degrees Celsius.
  • Cut all the vegetables, rinse the beans, place on a baking sheet/air fryer basket. Add fresh thyme, sea salt and drizzle pesto over the veggies, toss well until well combined. Bake in the oven/air fryer for 20-30 minutes, or until the veggies are tender and golden brown.
  • Remove veggies from the oven/air fryer, add olives and feta cheese. Serve with olives and feta cheese cold or bake for another five minutes if you prefer the olive and feta cheese warm and slightly melted. Drizzle with pesto and serve while warm.
