Prosciutto & Peach Salad

This is an easy, quick and delicious salad that comes together in only a few minutes. I love adding fruit to my meals, it makes the perfect combination of savory and sweet. I wanted to keep this salad clean, so that the prosciutto and peach were in focus, accompanied with some delicious heirloom tomatoes. This [...]

Saturdays are for brunching! This oat flour Dutch baby brings back so many childhood memories! It was my favorite brunch when I was little.. I always ate mine very quick and then begged my sister to share hers. And she always did, reluctantly.
My sister is home visiting for two weeks. So tonight we’re having dinner at my place. And that means extra everything! 🥂 🦞 🍤 💃🏻 (got to spoil your baby sister right?!) We’re starting our afternoon with these seared scallop bites topped with caviar, creme fraiche and shrimps. They might look fancy but are really so easy and quick to make. If you want an easy seafood appetizer you should give them a try!
This just my kind of salad or side dish! Easy and quick with just a few good quality ingredients! Tomato and mozzarella didn’t become an iconic combo for nothing!👌🏻
I usually eat my veggies fried or oven baked.. but when I feel that I want something that feels more “foody” I make veggie fritters. I love that they are more satisfying yet feel fresh and light at the same time. And you never have to get tired of them! You can really use the same basic recipe every time and just change the seasoning and add ins to vary the taste. I usually add the to my salad, eat them with a nice side dish and dip sauce or make a burger out of them. These cauliflower and leek fritters are gluten, dairy, grain free and can be made both vegan and non vegan!
Do you make your own granola or do you buy it? I very rarely buy granola at the store since it’s so easy to make a granola just as you like it in no time. When I buy one at the store there’s always too little of something than I would prefer to have more of. Or they add something I would rather not have included. And then of course... making your own is much more wallet friendly and you know there’s so hidden ingredients. This granola is a grain free coconut granola with lot of coconut flakes (you won’t have to use a magnifying glass to find them 🕵️‍♀️), almonds, seeds and cashew nuts. It’s vegan, gluten, grain free and low carb sweetened with fiber syrup. The recipe can easily be adjusted according to taste and preferences using any nuts you like or have at home.
Spicy oyster mushroom salad bowl is just what I need this Monday! It’s quick and easy to make. Spicy and flavorful yet fresh and light. The perfect mix of you ask me!
