
Who doesn’t love a good taco? I sure do. Also love the idea that you can vary it endlessly, so you’ll never get bored. This beef taco is light and fresh, even though it contains meat that sometimes tend to make a taco too heavy for my taste. The combination of meat, kiwi salsa, pickled red onion and feta cheese makes it filling yet fresh.

I love to keep a taco quite neat and clean. Keeping all the classic ingredients: a source of protein, a salsa and something to top it with. But that doesn’t mean you need to eat you taco with the classic tomato salsa and shredded cheese on top!

Today I wanted to make a fancier version of a classic taco with minced beef. I also wanted it to be filling, but still light and fresh. So I chose to make a tacos using a piece of organic beef and accompany it with a kiwi salsa and some creamy feta cheese.

Ingredients for the tacos:
- Gluten free tortilla bread
- Organic beef
- Kiwi
- Green chili
- Lime
- Parsley
- Scallion
- Feta cheese
- Pickled red onion

So I totally loved how this taco turned out! The combination of savory beef, sweet and fresh kiwi salsa, creamy and salty feta cheese topped with sweet and crunchy pickled red onion! Its a combination that creates a symphony in your mouth!
Beef Tacos with Kiwi Salsa
Ingredients
For the tacos
- 200 g Organic beef
- 8 Gluten free tortillas
- 0,5 package Feta cheese
- Salt to taste
- Pepper to taste
- 1 Lime cut into wedges
For the pickled red onion
- 1 Red onion thinly sliced
- 1 dl White wine vinegar
- 1 dl Water
- 1 tsp Sweetener (I used stevia)
For the kiwi salsa
- 2 Kiwis peeled and finely diced
- 1 Green chili finely sliced
- 1 Lime juiced
- A hand full of Parsley chopped
- 0,5 Scallion thinly sliced
- 1 tsp Salt
Instructions
For the pickled red onion
- Put all the ingredients for the pickled red onion in a pot and boil for 4-5 minutes.
- Drain the red onion and let it coo while you prepare the rest of the ingredients.
For the kiwi salsa
- Combine all the ingredients for the kiwi salsa in a bowl. Set aside and let it rest meanwhile you prepare the rest of the ingredients.
For the tacos
- Preheat a pan over medium/high heat with some olive oil.
- Put the meat in the pan and add salt and pepper.
- Let it fry for 3-5 minutes on each side (depending on how rare you like your meat).
- Meanwhile preheat a nonstick pan over medium heat.
- Fry the tortilla bread on each side until slightly browned.
- When the beef is ready, slice it into thin slices.
- Put the tortilla on a plate.
- Add 2-3 slices of beef, top with crumbled feta cheese and pickled red onion.
- Add lime wedges on the side.
