
These pancake cereals have been trending for a while now. Kind of spamming my instagram.. so I just had to find out what the fuzz was all about. They are for sure very cute and something a pancake lover should try. This is the perfect fun breakfast/brunch idea if you want to surprise your family and friends with something different!

Pancakes in a mini format. Why should one make the effort to stand and flip endless of mini pancakes when you can just make regular ones? Yes, that’s a questions I’ve asked myself before trying. And to be honest, I wouldn’t recommend you trying this a weekday morning when in a rush. Thats why they are perfect to make during the weekend when you have more time and no stress. Still I wouldn’t make them every weekend, but to mix things up and surprise your family with something different this is a really fun idea. But if you are a partied person (unlike me), and don’t mind standing by then stow for an additional 15 minutes compared to making regular pancakes this is the dish for you!

- Eggs
- Oat flour
- Almond milk (or any plant based milk)
- Baking powder
- Cinnamon
- Stevia sweetener

Pancake Breakfast Cereal
Ingredients
- 1 Egg
- 1,5 dl Oat flour
- 1 dl Almond milk (or any other milk)
- 1 tsp Baking powder
- 1 tsp Cinnamon
- 3-4 drops Vanilla stevia drops (can be replaced by 1 tsp vanilla extract)
- 1 tbsp Sugar if you prefer sweeter pancakes (optional, I did not use it)
- Coconut oil
Instructions
- Combine the dry ingredients in a bowl
- Add the wet ingredients and combine until you have a smooth batter
- Preheat the oven to 200 degrees
- Preheat a nonstick pan over medium heat with some coocnut ouk in it
- Make small pancakes by using one tsp of batter
- Fry on each side until golden
- When done put in a oven safe dish and put it in the oven while frying the rest of the batter. This will keep them warm and also make them extra crispy around the edges
- Serve with milk and your prefered topping
