
This is a recipe for delicious, easy and fun waffles made with porridge instead of waffle batter. This recipe is very easy and quick to make and is both a healthy and fun alternative to regular wafers. Serve these waffles for breakfast, brunch, lunch or as an afternoon treat. They are both gluten and sugar free.

I know wafles are a huge favorite for many people. And I totally get the hype! They are both festive, delicious and can be varied endlessly. For me waffles are something that I don’t make very often, instead I see it as that something extra you make for special occasions. But wafers can be made in so many other ways than just using regular waffle batter! Like these oatmeal waffles! These wafles are made just as it sounds – from cooked oatmeal! It’s a great way of both reinventing how to eat oatmeal and waffles at the same time. It is also healthier, more nutritious and a really fun way of twisting things up. I used two different porridge blend when making these oatmeal waffles. One is made using this apple cinnamon porridge blend and the second one is made with this cardamom and seed porridge blend (I will provide alternative options for these porridge blend below). They are then topped with Greek yogurt, granola, more porridge blend, fried apples and fresh blueberries. These waffles are great to serve both for breakfast, brunch, lunch or as a sweet treat. They are both gluten and sugar free.
A few tips:
- I used this apple cinnamon porridge blend for the apple wafer. But you can also combine oats, diced apples, cinnamon and chia seeds instead.
- I used this cardamom and seed porridge blend for the cardamom and seed wafers. But you can also combine oats, cardamom, sunflower seeds, chia seeds.
- I topped my waffles with above cardamom porridge blend and this chocolate granola. But you can use any topping you like, prefer or have at home.
- Grease the waffles machine well using either coconut oil or olive oil so the wafers doesn’t stick.
- Make sure the waffle machine is really hot before you add the porridge to them, to make sure they get crunchy, golden brown but not dry.

Oatmeal Waffles Two Ways (Gluten & Sugar Free)
Ingredients
For the wafers
- 1 1/2 dl Apple porridge blend
- 1 1/2 dl Cardamom & seed porridge blend
- 6 dl Water
- Pinch of Salt (optional)
For the topping
- 1 dl Greek yogurt, quark or whipped cream
- 1 Apple diced
- 1 tsp Cinnamon
- 2 tbsp Blueberries
- 1-2 tbsp Chocolate granola
- 1-2 tbsp Cardamom & seed porridge blend
Instructions
- Place the porridge blends (see note for alternatives to the porridge blends) in two separate bowls and add three dl of water to each of them. Add a pinch of salt (optional).
- Bring to a boil and then lower and let it shimmer for about five minutes, or until it has thickened.
- Meanwhile turn on your waffle machine.
- When the porridges are done grease the waffle machine with coconut oil.
- Add the porridge blend to the waffle machine (one at a time or in two separate if having a double waffle machine) and let them bake until golden brown and crispy.
- Meanwhile preheat a nonstick pan over medium heat with some coconut oil.
- Add the diced apples and cinnamon to pan and fry until the apples are golden brown.
- When the waffle are done top the apple porridge waffle with Greek yogurt/quark/whipped cream, fried apples and some cardamom and seed porridge blend.
- Top the cardamom & seed waffles with Greek yogurt/quarck/whipped cream, blueberries and chocolate granola.
- Serve immediately while warm.
