If your mouth isn’t watering as we speak, then I don’t know what will! This is such a wonderful, tasty, flavorful and super delicious dish that has a little bit of all the flavors and textures you can ask for. We all know that cheese, charcuterie and sweet fruits pair very well and are often served together as starters or appetizer. But why not combine these taste in a main dish? Here is a tender beef served with crunchy baked potatoes, warm sweet baked grapes, a wonderful savory and delicious Roquefort cheese and a herby, fresh yet very flavorful gremolata. If you’re looking for a delicious yet very easy meat dish you need to try this one. It is perfect to serve for a cozy weekend dinner or when having a dinner party. This dish is both easy, quick and gluten free.

A few tips:

  • Make sure to use a good quality beef and cheese. They are the main ingredients, hence you don’t want to compromise with the taste.
  • The baking time of the meat will vary depending on how raw you prefer it. As you see I like by beef very raw. Bake it until it reaches 59-65 degrees inner temperature.
  • You can use any blue cheese that you like and prefer. I used Roquefort for this dish.
  • Let the meat rest before you slice it. It will let the it keep the liquid and get more tender.
  • For the gremolata I used parsley, mint and cilantro. But you can use any herbs that you like or have at home.
  • I don’t like making the gremolata too oily, since I don’t like oil that much. If the gremolata turns out too thick, add more oil, water or lemon juice to get the right constancy. Also taste to check if more seasoning is needed, its all about how you like it.

Ingredients

For the gremolata

  • 1/2 dl Parsley finely chopped
  • 1 dl Cilantro finely chopped
  • 1 dl Mint finely chopped
  • 2 tbsp Capers
  • 1/2 Shallot minced
  • 1 Lemon juiced
  • 3/4-1 tbsp Olive oil
  • 1/2-3/4 tbsp White wine vinegar
  • 1-2 tsp Caper juice
  • Sea salt, to taste

For the beef and serving

  • 200-250 g Beef
  • 3-4 Potatoes sliced
  • 50-75 g Blue cheese of your choice (I used Roquefort) sliced
  • 15-20 Grapes
  • Sea salt, to taste
  • Black pepper, to taste
  • Olive oil
  • Butter (optional)

Instructions

  • Start by making the gremolata and then set it aside.
  • Preheat the oven to 175 degrees Celsius.
  • Slice potatoes and place on a parchment covered baking sheet with some olive oil and sea salt. Bake in the oven for about 15-20 minutes.
  • Preheat an iron pan over medium/high heat with some olive oil (and butter if prefered)
  • Season the beef with sea salt and black pepper (don't be shy) and fry the beef slices/slice for about 1-2 minutes on each side, until golden brown.
  • Place the beef in a oven safe baking dish and bake until it reaches 59 (raw) 61 (medium) 65 (well done) degrees inner temperature.
  • At the same time as you add the beef to the oven add the red grapes and let them bakes until the beef is done.
  • Meanwhile slice the cheese.
  • When the beef is ready turn off the oven, take out the beef and let it rest for 5-10 minutes. Then slice it into thin slices.
  • Arrange beef, baked potatoes and grapes and sliced blue cheese on a plate and serve immediately.
