This is a recipe for an easy, quick, healthy and super delicious Cream Cheese & Vegetable Sandwich. This sandwich only requires six ingredients and only take five minutes to put together. This sandwich is perfect to make either for breakfast, brunch, lunch, afternoon snack or to bring along on a picnic. It is both vegetarian and gluten free.
I have to admit I don’t eat sandwiches very often. It’s just nothing that I come to think of making and I prefer a good salad, omelet or a toast rather than a big sandwich. But sometime I get the biggest craving and have to make a really big one. And then it needs to be with home baked bread, with cream cheese, lot of different fresh and crunchy vegetables, salad and maybe also some chicken or turkey. I really don’t like them too heavy and greasy like a club sandwich, then I would just choose to eat a really nice home made burger instead. But this one, this one is just perfect. It’s big enough to get you full, it has a lot of different tastes and textures, it’s easy to make, nutritious but still light and fresh. You kind of don’t hit the wall after eating this one. I made it vegetarian, but if you don’t need to keep it vegetarian I would add some thinly sliced chicken or turkey bread as well. Preferably seasoned with cajun pepper, chili or some other spice that adds some heat. It makes the perfect combination with the creamy cream cheese and fresh and crunchy vegetables. I made this sandwich using my black bean bread with seeds to make it more nutritious and filling. This sandwich is perfect to serve for breakfast, brunch, lunch, afternoon snack or to bring along on a picnic. It is both vegetarian and gluten free.
A few tips:
- Don’t skimp on the ingredients. You want a big and well filled sandwich.
- I would recommend you to use a darker bread to make it more filling and nutritious. I used my black bean bread with seeds when making my sandwich.
- I usually like to slice my cucumber into quite thin slice, but when making this sandwich I chose to cut them a bit thicker just to really feel the cucumber when taking a bite.
- I would recommend you not to prepare the sandwich just until ready to eat. Otherwise the bread will get a bit wet and soggy from the cream cheese.
