One of my favorite and easy ways of using pumpkin is in these quick pumpkin bliss balls. You only need six easy ingredients and 10 minutes to make them. Not only are these pumpkin bliss balls super tasty and scrumptious, they’re also so cute and pretty to look at. I can guarantee that they will be appreciated by both kids and adults. These pumpkin bliss balls can be made plain or covered in a sugar cinnamon blend to make them snickerdoodle flavored. Top with chocolate chips or with stems from apples or pears. These cute and tasty pumpkin bliss balls are perfect to bring along for a healthy and nutritious snack or to have in the fridge when your sweet craving kicks in. Make them plain or snickerdoodle flavored.

Ingredients

  • 1 (2/5) dl (cups) Pumpkin purée
  • 1 1/3 (3/5) dl (cups) Oat flour
  • 1/2 (1/5) dl (cups) Almond flour
  • 2 tbsp Fiber syrup or agave
  • 2 tbsp Almond butter
  • 1 tsp Pumpkin spice (See note 1 for alternatives)
  • A pinch of Sea salt (optional)
  • 1 tbsp Monk fruit sweetener (optional)
  • 1 tbsp Cinnamon (optional)
  • Chocolate chips, to top (optional)

Instructions

  • Combine pumpkin purée, oat flour, almond flour, fiber syrup, almond butter, pumpin spice and sea salt (is using) in a bowl and mix until you have a firm dough. Add slightly more flour if the dough is too sticky. Place the dough in the fridge for 10-20 minutes (optional but makes it easier to roll the bliss balls).
  • Roll the dough into equally sized balls. Using a small spoon cave the sides to resemble a pumpkin.
  • Combine cinnamon and monk fruit sweetener in a small bowl. Roll the pumpkin bliss balls in the bowl covering all sides (optional).
  • Place on a plate, top with chocolate chips (optional) and place in the fridge.

Notes

Note 1 – Use 3/4 tsp cinnamon and 1/4 tsp of ginger, all spice, nutmeg and cloves if you don’t have pumpkin spice at home.
