Healthy Oat Peach Bars

These peach bars are sweet with a flaky crust and crunchy topping. They are vegan, free from refined sugar and gluten free. And they come together in only 30 minutes.

I love eating them as a snack, serving as a dessert or bringing along with me for a picnic when you want a sweet and healthy treat. They are really easy to make and only need a few ingredients.

Ingredients for these Healthy Oat Peach Bars:

  • Oats
  • Oat flour
  • Stevia vanilla drops
  • Fiber syrup (or any other liquid sweetener)
  • Coconut oil
  • Peach
  • Tapioca flour (or corn starch)
  • Cinnamon
  • Baking powder
  • Almond milk

Ingredients

For the crust

  • 3 dl Oats
  • 1/2 tsp Baking powder
  • A pinch of Salt
  • 3,5 tbsp Almond milk
  • 1 1/2-2 tbsp Coconut oil melted and cooled
  • 5-6 drops Vanilla stevia drops
  • 2-3 tbsp Fiber syrup (or any other liquid sweetener)

For the topping:

  • 2 dl Oats
  • 2 tbsp Oat flour
  • 1 tsp Cinnamon
  • 2-3 tbsp Fiber syrup (or any other liquid sweetener)
  • 2 tsp Coconut oil melted and cooled

For the filling:

  • 2-3 (about 2,5dl) Peaches pitted and finely diced
  • 1 tbsp Tapioca flour
  • 1 tsp Cinnamon

Instructions

  • Preheat the oven to 175 degrees Celsius.
  • Start by making the filling by combining all ingredients in a bowl. Set aside.
  • Continue by making the crust by combining all ingredients in a bowl. Using a fork or your hands combine everything unti you have a firm dough.
  • Now make the crust by combining dry ingredients in one bowl and wet ingredients in another bowl. Add wet ingredients to the bowl with the dry ones.
  • Combine until everything is well incorporated.
  • Add the crust onto a parchment paper. Make an evenly thin layer using your hands or using a rolling pin.
  • Put the parchment paper in a baking pan.
  • Add the filling on top of the crust. Gently push the filling a little bit with your hands so it really sits in place.
  • Add the crumble on top by sprinkling an even layer.
  • Bake in the oven for 25-30 minutes or until peaches are soft and the rust is baked through.
