This is a summery version of the classic caprese salad. I swapped sweet tomatoes for even sweeter peach, and the combination is just so lovely. I always loved combining fruit and cheese. It’s such a delicious combination, and there are endless variations. It’s something with the sweet meets tangy, it’s just to die for. So this time I tried adding peach instead of tomatoes with my mozzarella.

Serve this peach caprese as a starter, light lunch or even as a side dish. I love adding some thick balsamic vinegar on it as well.
