These breakfast buns are tender, juicy with a lovely hint of sweetness and warming cardamom. They’re the perfect fall and winter bake that you can make any day of the week. The apples make the buns extra juicy and tender, but also add a lovely subtle sweetness to the buns. The cardamom paired with the sweet apples and the tangy yogurt add a warming and comforting feeling and taste. I also love to add a pinch of cinnamon to make them extra cosy and comforting. These breakfast buns are made with just a few simple ingredients, take five minutes to throw together and are ready to serve in just 20 minutes. They are gluten, butter and oil free and can easily be made dairy free as well.
A few tips:
- Use flavorful fall/winter apples for these breakfast buns.
- I used freshly ground cardamom pods. You can use ground cardamom as well.
- Flaxseeds are optional, but they add a nice texture, a bit of a crunch and nutty flavour to the breakfast buns.
- I used natural yogurt for my buns, you can also use Greek style yogurt or quark.
- This batter makes 6 larger buns or 8 slightly smaller ones.
- You can bake these breakfast buns in your air fryer or in an oven.

Quick Apple Cardamom Breakfast Buns (Gluten, Nut, Butter & Oil Free)
Ingredients
For the breakfast buns
- 2 Eggs whisked
- 2 (1) dl (cup) Yogurt or filmjölk
- 4 (1 2/3) dl (cups) Rolled oats
- 1/2 (1/5) dl (cups) Flaxeeds
- 1/2 tsp Cardamom freshly ground
- 1/2 tsp Cinnamon
- 1/2 tsp Salt
- 1 1/2 tsp Baking powder
To top
- Cardamom (optional) freshly ground
- Rolled oats (optional)
Instructions
- Preheat your air fryer to 185 degrees Celsius or your oven to 200 degrees Celcius.
- Whisk together eggs and yogurt in a bowl.
- Add the remaining ingredients and stir to combine.
- Form 6-8 equally sized buns and place on parchment paper.
- Top with freshly ground cardamom and/or rolled oats.
- Bake in the air fryer for 15-17 minutes or in the oven for 20-25 minutes.
- Remove from the air fryer/oven and let them cool for 10 minutes.
