Apple & Cinnamon Oat Muffins with Oat Crumble (Gluten & Sugar Free)

These Apple & Cinnamon Oat Muffins with Oat Crumble are delicious, healthy and easy to make. They are moist, tender and filled with small pieces of apples. The topping is made using oat flour, oats, coconut oil, apple sauce, cinnamon and just a little stevia sugar. Since not using any sugar and just a little coconut oil for the crumble these muffins are healthy, light and can be served both for breakfast or afternoon treat.

Apple and Cinnamon is my all time favorite combination. I love everything with apple and cinnamon. It something about the combination that brings me back to when I was little and my mom used to make apple pie on Sundays. Apple pie Sundays were always my favorite! And since then this combination has become my favorite. The combination of warm apples together with the sweet and warming feeling the cinnamon adds is so comforting and warming. Which makes these muffins the perfect autumn/winter bake that can be served both for breakfast, afternoon snack or dessert.

I used Greek yogurt, apple sauce and oat flour for these muffins. This makes them both moist, light and delicious. The crumble is made using oat flour, oats, cinnamon, coconut oil, apple sauce and a little bit of stevia sugar. When making the crumble you can using only coconut oil or only apple sauce (if you want to make them oil free), but the texture will change slightly. These muffins can be stored for up to 4 days.

For the muffins

  • 2 Eggs
  • 1/2 dl Greek yogurt (low fat)
  • 1/2 dl Apple sauce
  • 2 dl Oat flour
  • 1 dl Oats
  • 1- 1 1/2 dl Stevia Sugar or corresponding amout of coconut sugar
  • 1 tsp Bakings powder
  • 1/2 tsp Baking soda
  • 2 tsp Cinnamon
  • 1 small Apple peeled and finely diced

For the crumble

  • 1 dl Oats
  • 1 dl Oat flour
  • 2 tsp Coconut oil
  • 2 tsp Apple sauce (or more coconut oil)
  • 1 tsp Cinnamon
  • 1/2 tbsp Stevia granular sugar
  • 1 small Apple thinly sliced
