I love making desserts with a bit of a twist. It’s an easy and fun way of turning a classic dessert in a different way, form or with unexpected flavor combinations. These brownie salted caramel popsicles have a base of a rich and delicious brownie with a homemade salted caramel sauce dipped in chocolate. They can be served straight from the freezer as a popsicle or thawed for a 5-10 minutes and served as a cakesicle with a soft brownie and runny caramel sauce. So it’s like eating a frozen brownie caramel popsicle or having brownie with salted caramel sauce but on a stick. How fun is that? I can guarantee that these brownie salted caramel popsicles will be a hit for both kids and adults. Not only are these brownie salted caramel popsicles incredibly delicious and fun, they’re also a healthy dessert alternative. The brownie layer is made with oat flour, sugar free sweetener, yogurt/quark and applesauce to make them more nutritious and healthier, while still turning out moist and gooey. The salted caramel sauce is made with skimmed cream and fiber syrup, which keeps it creamy, sweet and tasty but not too heavy or overwhelming. They are also gluten and sugar free.


A few tips:
- I used silicone popsicle molds to make these popsicles. You can also make them in bar molds or in a rectangular baking pan and slice them before dipping them in chocolate.
- The baking time will vary depending on 1. if you bake them in separate silicone popsicle/bar molds or in a baking pan, 2. How fudgy you prefer your brownies.
- I used skimmed cream for the salted caramel, you can however use any cream that you like or have at home.
- I used fiber syrup as a sweetener for the salted caramel sauce, you can also use honey or agave.
- If making the brownies in a baking pan top the whole brownie with the salted caramel sauce and slice it just before dipping them in the chocolate.
- Store the bars in the freezer, eat straight from the freezer or let them thaw for a softer and more fudgy brownie and runny salted caramel sauce.

Brownie Salted Caramel Popsicle (Gluten & Sugar Free)
Equipment
- 6 Popsicle molds (preferably silicon)
Ingredients
For the brownies
- 1 Egg
- 1/2-1 (1/4-1/2) dl (cups) Granulated sugar free sweetener
- 1/2 (1/4) dl (cups) Yogurt or quark
- 3 tbsp Applesauce
- 2 tbsp Milk
- 3/4 (1/3) dl (cups Oat flour
- 1/2 (1/4) dl (cups) Cacao powder
- 1/2 tsp Baking powder
- 1/4 tsp Salt
For the caramel sauce
- 2 1/2 (1) dl (cups) Cream (I used skimmed cream)
- 4-5 tbsp Fiber syrup/agave/honey
- Stevia neutral drops (optional, if you prefer it sweeter)
- A pinch of Sea salt
For the popsicles
- 200-250 g Sugar free chocolate (preferably 60-85% chocolate)
- Sea salt, to top (optional)
Instructions
- Preheat the oven to 175 degrees Celsius.
- Add egg and sugar to a bowl. Whisk gently until combined, do not whisk too much.
- Add yogurt/quark, applesauce and milk. Stir until combined.
- Combine oat flour, cacao powder, baking powder and sea salt in a bowl. Sift into the batter, then stir just until combined.
- Divide the brownie batter between silicon molds, filling them about 2/3 of the way up (this makes 4-8 popsicles depending on how large your molds are).
- Bake in the oven for 12-16 minutes, depending on how big your molds are and how fudgy you prefer your brownies.
- Remove from the oven, let them cool completely. Then place in the freezer.
- Make the caramel sauce by adding cream, fiber syrup/agave/honey to a pot and bring to a boil. Lower the heat to medium, let the sauce cook until reduced and thickened. Stir every now and then to make sure it doesn't burn at the bottom of the pot. Remove from the heat and let it cool.
- Remove the popsicles from the freezer, top each popsicle with salted caramel sauce. Place back into the freezer for 3-4 hours, or over night.
- When the brownies and caramel sauce is set and frozen melt chocolate in a microwave or over a water bath.
- Pour the melted chocolate into a high glass. Dip each popsicle in the melted chocolate. Drizzle excess chocolate over the popsicles and sprinkle with sea salt (if using).
- Place back into the freezer for about 30 minutes.
- Remove popsicles 5-15 minutes before serving, depending on if you prefer them frozen or softened.
