Sweet Potato Hash Browns with Plums & Feta Cheese

These small sweet potato hash brown bites are a delicious pre-dinner snack/finger food or appetizer to serve during autumn. They are ready in only 15 minutes and are really easy to make. They are a great combination of sweet, salty and warm hash browns, fresh and tangy plums, salty and creamy feta cheese with a drizzle of balsamic vinegar on top.

Since I don’t eat gluten I have been using sweet potatoes as a substitute to bread and crostini for some time now, and I really have to say that I prefer the sweet potato over the bread options. It juicier, has such a nice and creamy texture and is really easy to make. Usually I cut sweet potatoes into circles and bake them in the oven. But lately I’ve been making these sweet potato hash browns more often. They have a bit more texture and chewing resistance than the baked sweet potatoes and they feel more filling than the baked ones. Either way, I love using sweet potatoes as a substitute to bread and crostini.

Ingredients

  • 1/2-1 Sweet potato (depending on the size) grated
  • 1 tsp Salt
  • 2 Plums pitted and cut into wedges
  • 1/4 package Feta cheese crumbled
  • Thick balsamic vinegar

Instructions

  • Preheat a nonstick pan over medium heat with some olive oil.
  • Grate the sweet potato and combine with salt.
  • Form small patties out of the sweet potato and add to the nonstick pan, fry for 2-3 minutes on each side until golden brown. Don't flip too early, then they might break.
  • Meanwhile the hash browns are frying pit and slice the plums into wedges.
  • When sweet potato hash brown are ready put on a plate, top with the sliced plums and top with crumbled feta cheese and thick balsamic vinegar.
