Citrus & Mozzarella Salad (Gluten Free)

It’s easy to adapt depending on which citrus fruits you have available and you can swap the hazelnuts for almonds, walnuts or cashews. This is truly a go to dish if you want something really quick, easy and delicious!

Citrus season is on, and Im totally loving it! I have always been a big fan of citrus fruits, they’re so delicious, juicy and healthy! I used to eat at least one grapefruit a day, it was a holy tradition, and also several oranges a week. Not only are they so delicious and healthy to have as an afternoon snack. But they’re also perfect to include in your salads or when cooking. Today I made this really simple, quick and easy citrus and mozzarella salad. With all the Christmas treats, candy and food I really feel like I need something light, fresh and easy. And that is when I crave something like this citrus mozzarella salad. This dish is perfect to serve either as a light lunch, appetizer or as a side dish to your main course. It’s really divine on it’s own, but also pairs so well with both fish and chicken! And it is ready on only five minutes!

  • Mozzarella
  • Grapefruit
  • Orange
  • Sunflower sprouts
  • Hazelnuts
  • Black pepper
  • Olive oil (optional)
  • Balsamic vinegar (optional)

Ingredients

  • 1 Mozzarella
  • 1/2 Grapefruit filead and sliced
  • 1/2 Orange filead and sliced
  • Sunflower sprouts
  • 1/2 tbsp Hazelnuts roughly chopped
  • Freshly ground pepper, to taste
  • Olive oil (optional, I did not use it)
  • Balsamic vinegar (optional)

Instructions

  • Filea the grapefruit and orange and then slice into 1/2 cm slices.
  • Arrange the grapefruit and orange on a plate.
  • Add the mozzarella on the side.
  • Top with sunflower sprouts, chopped hazelnuts and freshly ground pepper. Add olive oil or/and balsamic vinegar on top.
