I don’t know anybody who doesn’t like potatoes. And I also don’t know a more versatile vegetable/root vegetable. I think my favorite way of preparing potatoes is making them in the oven. So easy and simple yet so delicious. But sometimes you like to spice things up a little and make them more festive. That’s when you should try making these smashed potatoes with Creme Fraiche and fish roe! They are super easy to make, require minimum effort from your end yet taste so insanely delicious. And they are so versatile and can be used for multiple purposes. You can serve them as finger food or appetizers, include them in a buffet or sharing dinner or serve them as a side dish to your main course.

A few tips:

  • Try to use equally sized potatoes. And preferably not too big once. You want them to almost be bite sized.
  • Use firm potatoes so that they don’t break while cooking.
  • Don’t cook the potatoes for too long. They should be tender and soft but not fall apart.
  • Also don’t bake the potatoes in the oven for too long, then they might get dry. Bake them until golden brown.
  • You can make these potatoes plain or with other toppings as well.

Ingredients

  • 10 Small potaotes washed
  • 1/2 dl Creme Fraiche
  • 1/2 small Red onion minced
  • 6-8 tsp Fish roe
  • Chives finely chopped
  • Sea salt
  • Olive oil

Instructions

  • Bring water to a boil in a pot with some salt.
  • Add the potatoes and let them cook for about 20 minutes.
  • Drain and let cool for one minute.
  • Meanwhile preheat the oven to 220 degrees Celcius.
  • Place the potatoes on a parchment covered baking sheet and hash them until they crack open using the bottom of a pot, frying pan or potato masher.
  • Drizzle with olive oil and salt and bake in the oven for about 20 minutes, until soft and golden brown.
  • When the potatoes are ready take them out of the oven and place on a plate.
  • Top by dolloping Creme Fraiche and fish roe evenly around the potatoes. And then top with red onion and chives.
