
This is a recipe for a flavorful and tasty yet light and fresh Roasted Point Cabbage with Basil & Pistachio Sauce. This recipe is both easy and quick to make, requires almost no effort from your end and only includes a few easy ingredients. Serve this roasted point cabbage with basil & pistachio sauce as a main course or side dish. It is vegetarian, gluten, grain free and low carb.


Roasted cabbage dishes have become one of my favorite dishes over the years. From thinking cabbage is a bit bland, softish and tasteless vegetable that is served as a side dish while growing up.. To realizing it is such a versatile and incredibly delicious and tasty vegetable that pairs and can be served with just about anything has made me starstruck! Even if Im still fond of the soft and creamy cabbage that I grew up eating, I love preparing cabbage in other ways as well. Especially rosting it! This recipe is for an easy, crispy, quick and flavorful roasted point cabbage that is served with a fresh and light basil and pistachio sauce. The sauce is made with just a few easy and simple ingredient and can be served both warm or cold. My version includes pistachio nuts, but they can be replaced with cashew nuts, almonds, hazelnut, pine nuts, sunflower or pumpkin seeds as well. Or you can skip the nuts/seeds all together. Serve this soft roasted cabbage with crunchy edges together, smooth and flavorful basil sauce with shaved (flavorful) cheese and crunchy hazelnuts on top. This dish is just as good to serve as a main course or side dish. It is vegetarian, gluten, grain free and low carb.
A few tips:
- Cut the point cabbage rounds/steaks into equally thick pieces to make sure all steaks have the same baking time.
- You can make the point cabbage steaks/rounds in the oven or in an air fryer. Choose the option that you prefer.
- The baking time will vary slightly depending on how thick and big your cabbage is. It is ready when it has a soft and tender core and is golden around the edges. Keep an close eye on the cabbage so it doesn’t burn.
- The basil and pistachio sauce can be served both warm and cold, depending on how you prefer it.
- I used pistachio nuts in my basil sauce. You can however use any nuts or seeds that you like, or skip them all together. The taste and texture will vary slightly depending on which nuts you use or if you choose to skip them all together.
- You can top this dish with any flavorful cheese of your liking. Parmesan, gruyere, pecorino, manchego, Swedish västerbottenost are a few cheeses that are delish to top with.

- Point cabbage

- Creme fraiche or greek yogurt
- Garlic
- White wine
- Pistachio nuts

- Parmesan, Gruyere, Pecorino, Manchego or other flavorful cheese

Roasted Point Cabbage with Basil Pistachio Sauce (Vegetarian, Gluten, Grain Free & Low Carb)
Ingredients
- 1 Point cabbage sliced into rounds
- Sea salt, to taste
- Black pepper, to taste
- 1/2 Lemon zested
- 1/2 Lemon juiced
- A drizzle of Olive oil
For the sauce
- A hand full of Basil (or mixed fresh herbs)
- 1 (2/5) dl (cups) Creme fraiche or greek yogurt
- 1/2 Lemon zested
- 1/2 Lemon juiced
- 2 Garlic cloves
- 2 tbsp White wine
- 2-3 tbsp Pistachio nuts
- Sea salt, to taste
- Black pepper, to taste
For serving
- 2-3 tbsp Hazelnuts (I used roasted) roughly chopped
- Parmesan, Gruyere, Pecorino, Manchego(or any other flavorful cheese of your choice) grated
- Fresh basil
Instructions
- Preheat the oven or air fryer to 200 degrees Celsius.
- Slice the point cabbage into 1 cm thick rounds.
- Brush or drizzle with a little bit of olive oil.
- Top with lemon zest, lemon juice, sea salt and freshly grated black pepper.
- Place in the oven/air fryer and bake for 20-25 minutes in the oven or 7-8 minutes in the air fryer then flip and bake for another 7-8 minutes, until the edges are crunchy and golden brown.
- Meanwhile add all the ingredients for the basil pistachio sauce to a blender and mix until smooth. Taste and add more seasoning as needed.
- You can serve the basil pistachio sauce warm or cold, as you prefer. Id serving it warm heat it on low heat in a small pot.
- Place the sauce at the bottom of a plate, top with roasted cabbage, roughly chopped hazelnuts, grated cheese and fresh basil.
