As you might know, I love making small snacks that can be served as finger food, pre-dinner snack and appetizers. It’s nice to just sit down, wind down and get into dinner mode before the dinner actually starts. It doesn’t have to be complicated, advanced or time consuming. Like these spicy shrimp bites. They are made with a few easy ingredients and only take 10 minutes to make. You have a delicious mix of fresh and crunchy lettuce, scallion and radish, creamy spicy shrimps and some furikake seasoning on top. These spicy prawns bites are easy to adapt according to food preferences and allergies (you can easily swap the Creme Fraiche and mayonnaise for vegan options). Serve them as appetizers, finger food or include them in a buffet or sharing dinner. They are both gluten, grain free and low carb.
A few tips:
- Buy good quality shrimp and not the small, cheap ones in a jar. They are the key ingredients here so you want them to be of good quality.
- Make sure to peel and rinse the shrimps well before combining them wit the rest of the ingredients.
- You can adjust the amount of sriracha according to taste. Start by adding a little, and then more as needed.
- You can adjust the Creme Fraiche/mayonnaise ratio according to taste. I prefer to keep these shrimp bites a little lighter, hence only adding a little bot pf mayonnaise.
- You can prepare the shrimps in advance, mixing them with the rest of the ingredients. Store the shrimps in the fridge until ready to serve.
- Prepare the rest of the ingredients just before ready to serve. It only takes five minutes to slice them up and assemble these bites.
