This easy, tasty and quick recipe is for Honey and Chili Glazed Grilled Halloumi with Eggplant and Tomatoes. It is made with just a few staple and easy ingredients and takes about 10-15 minutes to make. Serve this dish for lunch, dinner, as a sharing dish or include in a buffet. It is vegetarian, gluten, grain free and low carb.

Halloumi is such a nice cheese that is just great to use in so many different ways. I love adding it to salads, making burgers out of it, use in sandwiches or just to serve as a pre-dinner snack or appetizer. My favorite way of pairing halloumi is with sweet flavors, since it makes such a wonderful combination with the salty halloumi. Be it fruits, berries, beetroots or like here with honey. My latest addition has however become to add a bit of heat to this combination as well. In that way you get an even better combinations of flavors that combines both salty, sweet, hot and spicy. To serve along with this honey and chili grilled halloumi you have grilled eggplant, fresh tomatoes and spinach to add a mild, soft and creamy texture. And some pomegranate seeds that add a crunchy texture and slightly tart flavor. This dish is really easy and quick to make, only requiring a few easy ingredients, but still is very flavorful, well combined and balanced and just incredibly delicious. Serve this dish for lunch, dinner or include it in a sharing dinner or buffet. It is vegetarian, gluten, grain free and low carb (if using sugar free liquid sweetener). 

A few tips:

  • Adjust the amount of chili flakes according to taste, to get it just the way you like.
  • Use a good quality halloumi to make sure it grills well, becomes soft and creamy on the inside and crispy on the outside.
  • I used eggplant to put on the grill. You can however use any of your favorite vegetables to put on the grill.
  • Use good quality tomatoes to make sure they’re juicy and sweet. Do not use the cheaper bland ones. You want the tomatoes to add a nice fresh, juicy and slightly sweet flavor to the dish. Hence using bland and tasteless ones will not give the same result.
  • Make sure you don’t grill the halloumi for too long so it becomes dry or burnt.
  • You can serve this dish just as is or together with some cooked/fried potatoes, rice or quinoa.

This sweet and spicy halloumi served with grilled eggplants and tomatoes is an easy and tasty dish that is just as good to serve as a main course or side dish.

Ingredients

  • 1 package Halloumi sliced
  • 2 tbsp Fiber syrup/honey/agave
  • 1/3-1/2 tsp Chili powder
  • 1/2 tsp Lemon juice
  • 1/2-1 tsp Water
  • A pinch of Sea salt
  • 1/2 Eggplant sliced
  • 1-2 Tomatoes (I used different kinds) sliced
  • Pomegranate seeds
  • Two hand full of Fresh spinach
  • Olive oil, to fry/grill

Instructions

  • Preheat a grill pan or grill with some olive oil.
  • When the pan/grill is hot place the eggplants and let them fry for a few minutes on each side, until they soften and grill marks start to appear.
  • Meanwhile combine honey, chili powder, lemon juice, water and sea salt in a small bowl.
  • Slice the halloumi and brush one side with the honey chili glaze.
  • When the first side of the eggplants is done and you turn them add the halloumi to the pan/grill and let them fry/grill for 2-3 minutes on each side, until golden brown. Before turning the halloumi slices brush the other side with the glaze as well. Save the rest of the glaze for later.
  • Place spinach at the bottom of two plates, continue with sliced tomatoes. Top with grilled eggplant slices, halloumi and pomegranate seeds. Drizzle the remaining glaze over the dish.
