
This is a healthy, delicious and flavorful tofu bowl served with a spicy tamarind dressing. The tofu is marinated in a light and fresh marinade and then baked in the oven. The bowl itself consist of salad, fresh vegetables and spiralized zucchini. To top this tofu bowl I made a fresh, spicy, tangy and a bit sour tamarind dressing. This tofu bowl is vegan & gluten free and is ready to eat in no more than 15-20 minutes.

This tofu bowl can easily be adapted by using any crispy vegetables you have at home. If you prefer a little more filling meal you can also add your favorite noodles. Depending on how you prefer your dressing some honey or agave can be added to balance the out a bit of the tanginess and sourness, but I prefer it more sour and tangy.

Ingredients for this Tofu Bowl with a Spicy Tamarind Dressing:
- Green leafs
- Zucchini
- Carrot
- Sugar snaps or snow peas
- Scallion
- Tofu
- Tamari
- Sesame oil
- Lime
- Rice or white wine vinegar
- Tamarind paste
- Red chili
- Garlic (optional)
- Fresh ginger
- Agave or honey (optional)

Tofu Bowl with a Spicy Tamarind Dressing
Ingredients
For the salad bowl
- 2 hands full of Green leafs
- 1 Zucchini spiralized
- 1 large Carrot washed and shaved
- 10 Sugar snaps or snow peas thinly sliced lenght wise
- 1 Scallion (both with and green parts) sliced
For the tofu
- 1 package Tofu diced
- 3 tbsp Tamari (or soya sauce)
- 1 tbsp Sesame oil
- 1/2 Lime juiced
- 1 tbsp Rice or white wine vinegar
For the spicy tamarind sauce
- 3 tbsp Tamarind paste
- 1 tbsp Sesame oil
- 1 tbsp Rice or white wine vinegar
- 1/2 Lime juiced
- 1/2-1 Red chili finely chopped
- 1/2 Garlic clove (optional) minced
- 1/2-1 cm Fresh ginger grated
- 1/2-1 tbsp Agave or honey (optional, I did not use it)
Instructions
- Preheat the oven to 175 degrees Celcius.
- Combine all ingredients for the tofu in a bowl, except for the tofu.
- Dice the tofu and add to the bowl. Combine and make sure that the sauce covers all parts.
- Place the tofu on a parchment covered baking sheet and bake in the oven for 10 minutes.
- Combine all ingredients for the spicy tamarind marinade in a bowl and set aside.
- Add the vegetables in two bowls.
- When the tofu is ready place it on top of the vegetables.
- Serve with the spicy tamarind dressing.
